Chunky Cherry Chia Jam

I whipped up this easy jam in preparation for my second Whole30. We have a big group of people starting the Whole30 tomorrow at work and I'm excited to share this compliant jam. You can spread this jam on the trendy sweet potato "toast" slices, as a topping for my creamy banana nut bowl, spread on apple slices- you name it! Because this recipe has no added sweetness, I opted to make it using frozen sweet cherries. 

If I weren't prepping for the Whole30, I would add in a tablespoon or two of honey for a little added natural sweetness. The chia seeds act as thickener so be sure to let the cherries break down enough to render lots of juice for the chia seeds. 

You need:

  • 2 cups frozen sweet cherries 
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice 

Get cooking:

In a saucepan, combine cherries with lemon juice. If I were using a sweetener, I would add that here as well. Turn heat to medium-high and allow the cherries to break down and release their juices. This should take about ten minutes. 

Add the chia seeds and stir to combine. Bring the jam to a simmer and let cook for another ten minutes. Stir the mixture frequently. Once thickened, turn off heat and let cool. Transfer to a storage container and keep in refrigerator!
