Crunchy Fig Granola

I love granola! I think I could sustain off the millions of different varieties for my entire life if it were necessary. This fun version is crunchy and loaded to the max with dried figs! You can pretty much add dried figs to anything and (to me at least) it turns into a classic ole Fig Newton. Growing up, if I felt like being healthy I'd bypass the beloved Double Stuffed Oreo and choose the Fig Newton, it was made of fruit after all! 😂😂😂  Those days are gone but the figs we know and love are still around!

I am still sometimes shocked that I've turned into a person that makes their own granola but my goodness it is just incredibly easy! The ingredient list is lengthy but the return in vitamins and nutrients from all those goodies is mind boggling. I love eating this granola with almond milk, topped on smoothie bowls, drizzled with extra honey and sprinkled with fresh fruit or to be honest just as a midday snack right out of the container!  

Crunchy Fig Granola

You need:

  • 2 cups old fashion oats
  • 1 cup raw buckwheat groats
  • 3/4 cup dried figs chopped
  • 1/2 cup chopped pecans 
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 1/4 cup creamy almond butter
  • 1/2 cup brown rice syrup 
  • 1/3 cup coconut oil
  • 1 teaspoons pure vanilla extract
  • 1 tsp cinnamon
  • 1 tsp vanilla powder 
  • 1/4 teaspoon fine grain sea salt

Get cooking:

  1. Preheat oven to 350 degrees
  2. In a large bowl, stir together the oats, buckwheat groats, dried figs, pecans, chia seeds, hemp seeds, cinnamon and vanilla powder.
  3. Melt the almond butter, brown rice syrup, coconut oil, and sea salt in a saucepan over low heat, only about 3-4 minutes. Remove from the heat and add in vanilla extract.
  4. Pour the warm mixture over the dry ingredients and stir to incorporate. 
  5. Line a large roasting pan with parchment paper (or use a silpat) and distribute the granola evenly across the pan.
  6. Bake for 15 minutes. Remove from the oven and stir around. Bake for another 10 minutes or until the granola becomes golden. 
  7. Remove the granola from the oven and let cool completely.
  8. Once cooled the granola will crunch up! Break into clusters to your pleasing.

Store in an airtight container. It will keep free for a few weeks!
