Cinnamon Pear Overnight Oats
I came across a Butterscotch Pear at Earthfare and had no reason to buy it other than serious curiosity...did it really taste like butterscotch? I was eager to cut into it by the time I got home and much to my delight- it DOES taste like butterscotch! It was buttery and sweet with that very familiar butterscotch-y aftertaste. I loved it and my mind immediately went to whipping up some overnight oats! I loooveee overnight oats! They are so easy to make and have a million different ways to change the flavors but this batch is definitely my current favorite! The coconut yogurt brings an entirely different level of creamy versus using just almond or cashew milk. If you don't happen upon a butterscotch pear while browsing your local market, just use a very large regular pear or two small ones.
This recipe is one of those where I can't imagine anyone wanting anything different added in, it doesn't need dairy to be delicious. You can make healthy, goodness filled breakfasts that don't require adding in insane amounts of sugar or any ingredient that is going to make you feel any kinds of negative throughout your day. I promise, take my word, I've been there. I would LOVE for you to make this recipe, it just won't disappoint and you have my honor- you'll have No FOMO about your breakfast choice. In fact, I'd venture to say that folks will be eyeing your amazing bowl of creamy oats and drooling over your shoulder. Go on, make 'em!
Cinnamon Pear Overnight Oats
You need:
- 1 large pear (I used a butterscotch pear!)
- 1 cup thick rolled oats
- 1 cup unsweetened coconut yogurt
- 2 tbl dried tart cherries
- 2 tbl pepita seeds (pumpkin seeds)
- 2 tbl golden raisins
- 1 tsp cinnamon
- 1 tbl maple syrup
- 2 tbl chopped walnuts for topping
Get cooking:
- Grate half of the pear using a cheese grater. This should yield about 1/2-3/4 cup grated pear. Dice the remaining pear into small pieces.
- Add the pear, oats, yogurt, cherries, pepita seeds, raisins, cherries, cinnamon and maple to a large bowl, stir and cover.
- Place the bowl in the fridge to soak overnight so that the oats can soften and absorb the liquid.
- Top with walnuts before serving. I don't like my overnight oats too sweet so feel free to add more maple or honey if that is what you prefer!
These oats will stay fresh in the fridge for about 3 days.
