I'm starting the week off with a big ole glass of greens. There's nothing quite like the energy and mood boost that comes along with nourishing your body with such goodness. After seeing lots of Insta friend using collagen peptides, I'm jumping on the bandwagon. I've been growing my hair out for nearly a year and half now and I'd be grateful for any help in getting it to a healthier place! I'm starting out slow, adding a scoop to my smoothies here or there- I'll let you guys know what my progress looks like here in a few weeks! (Fingers crossed for Rapunzel like outcomes). 

Kale, my dear superfood friend, is the star of this smoothie. Not because the smoothie tastes like kale (it doesn't!) but because you will be hard pressed to find any other food that yields such high nutritional value - in 1 cup of kale you'll intake 36 calories but over 1300% of your daily recommended vitamin K and over 300% of the recommended amount of vitamin A. Not only that but this sturdy veggie has antioxidant, anti-inflammatory and anti-cancer nutrients. I just can't think of any better way to start of this week. April is here and our Florida vacation is just a few weeks away, you better believe I am counting down the days! Sun, seafood, bike rides and maybe even a day at the spa...yay!!! 👙🌞🌴💦

Simple Kale Smoothie

You need:

  • Large handful kale, destemmed & leaves torn
  • 1 frozen banana, sliced
  • 1 scoop collagen peptides (Vital Proteins, unflavored) (optional!)
  • 1 tbl peanut butter 
  • 1 tbl maca powder
  • 1 tsp pure vanilla extract
  • 1/2 cup ice cubes
  • 1 cup unsweetened almond milk 

Get cooking:

  1. Add everything to a high speed blender and blend until very smooth.
