This strawberry angel mousse is a busy momโs recipe for successful dessert in no time! This simple treat is best enjoyed on a sunny day- IMO! Strawberries really come to life when paired with sugar and creamy goodness. This mousse ends up tasting like light and fluffy angel food cake topped with fresh berries & a squeeze of lemon. Ingredients:
One can sweetened condensed coconut milk
1 tub coconut whip cream (I like So Delicious)
2 cups frozen strawberries
1 lemon, zested & then juiced
To make:
Add the sweetened condensed coconut milk, frozen strawberries and lemon juice to a blender. Blitz until smooth, about 30 seconds.
Add the pureed mix to a large bowl and add in the coconut whip cream and lemon zest. Delicately fold so that you donโt stir out the volume from the whip cream.
Eat right away or store in the fridge for a firmer texture. Enjoy!
