*WATCH* ๐Ÿ“ Strawberry Angel Mousse (dairy-free)

This strawberry angel mousse is a busy momโ€™s recipe for successful dessert in no time! This simple treat is best enjoyed on a sunny day- IMO! Strawberries really come to life when paired with sugar and creamy goodness. This mousse ends up tasting like light and fluffy angel food cake topped with fresh berries & a squeeze of lemon. Ingredients:

  • One can sweetened condensed coconut milk

  • 1 tub coconut whip cream (I like So Delicious)

  • 2 cups frozen strawberries

  • 1 lemon, zested & then juiced

To make:

  1. Add the sweetened condensed coconut milk, frozen strawberries and lemon juice to a blender. Blitz until smooth, about 30 seconds.

  2. Add the pureed mix to a large bowl and add in the coconut whip cream and lemon zest. Delicately fold so that you donโ€™t stir out the volume from the whip cream.

  3. Eat right away or store in the fridge for a firmer texture. Enjoy!
