Peaches & Cream Mousse (dairy-free)
This simple dessert is ultra creamy and silky sweet. Peaches are notorious for their easy pairing to dairy products so I easily swapped in coconut whipped cream for a non-dairy spin. The lemon enhances the peach flavor boosting it with the perfect amount of pop. Close your eyes and it may even taste, dare I say- tropical?
Ingredients:
2 cups frozen peaches
9 oz tub coconut whipped cream ( I used So Delicious)
1 can sweetened condensed coconut
1 lemon, zested and then juiced
How to:
First off, donโt forget to zest your lemon!
Add the peaches condensed coconut milk and lemon juice to a blender. Blitz until completely smooth.
Add the zest and whipped cream to a large bowl. Pour in the blended peaches and cream. Fold the whipped cream and zest with the peaches until no white streaks are remaining.
Eat right away or chill for a firmer mousse.
Feeds four adults large servings! Keeps about five days in the fridge.
