Green Goddess Dressing

What's more fun than this bright green multi-use dressing? Use it to spruce up a salad, skillet fish or grilled chicken! Make it on a Sunday evening and put it to use livening up your work week lunches or dinners. I found this recipe from Gwyneth Paltrow's It's All Good and couldn't wait to give it a try. There are lots of ingredients involved but no true cooking! This dressing is a breeze to whip up. Store in jar and shake before each use.

You need:

  • 10 large basil leaves
  • 1 tablespoon chopped chives
  • 5 sprigs cilantro, leaves chopped (2 tablespoons)
  • 1/4 cup chopped parsley 
  • Leaves from 1 sprig tarragon 
  • 2 scallions chopped- use only light green & white sections
  • 1/2 avocado 
  • 1/4 cup mayo
  • 2 tablespoons raw honey
  • 2 tablespoons white wine vinegar
  • 1/4 cup lemon juice (1 whole lemon)
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup water
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Get cooking:

Place all ingredients in high speed blender and puree until completely smooth.
