Shamrock Shake with Spinach

You might think I’m wack to add spinach to a “milk” shake but a mom has to do what a mom has to do. No artificial dyes and one very pleased toddler. Happy St. Patrick’s day!

Shamrock Shake with Spinach

Ingredients:

  • 3/4 cup Vanilla Oatly - or any dairy-free vanilla ice cream 

  • 1/4-1/2 cup cashew milk

  • Handful or 1 loose packed cup spinach 

  • 10 small mint leaves or 5 large mint leaves

  • Optional almond milk whipped cream, dairy-free

  • Optional cherry for top 

Instructions:

  1. Add all ingredients to a blender. Start using less cashew milk or any other plant-based milk to ensure your shake doesn’t get to thin. Oatly is not a dense dairy-free ice cream so less added liquid, the better.

Serves two small portions.
